Vacation OBX Style

OK, so it’s been almost a week since my last post.  Woops!  I’ve been extremely busy with laying on the beach all day and cocktail hours every night 🙂  But really, the beach has been fantastic!  We got here last Thursday night around 11:30 and have been enjoying our home away from home ever since.

We’ve pretty much had Corona’s glued to our hands 🙂  Trevor’s parents house is on the Oceanside so we can see the waves come rolling in on the top deck.  The weather has been great except for a couple thunderstorms at night, but nothing beats a thunderstorm at the beach. 

The first couple of days the house was filled, there were 15 of us, plus camden, Gavin & Emily’s dog.  Most of the family was here for just the first week and has since left, so we’re down to 8 now.  While the whole family was here we had our yearly OBX Boil.  We cover the table with steamed shrimp, clams & mussels as well as corn on the cob, sausage and potatoes.  It’s our favorite beach meal 🙂

On Monday we celebrated the 4th with a signature drink and a festive dessert!  Let’s be honest, vacation is all about the sun, the drinks and the food 🙂

The signature drink was a Watermelon Cooler, we found the recipe in the local paper. 

Serves 8: 8 cups seeldess watermelon cubed, 2 cups vodka, 1/4 cup honey, juice of one lime, basil leaves for garnish (we didn’t have these so we added blueberries instead to incorporate som blue).  Blend together all ingredients, poor over ice and garnish. 

It was really easy to make and very good!  Not too sweet and very refreshing.  Our dessert was from a recipe I found on Gina’s Skinny Taste.  This is one of my favorite sites.  She comes up with healthy ways to make your favorite dishes and they aren’t super complicated.  This dessert is very patriotic!  The recipe calls for you to make it in a trifle bowl, but we substituted with a 9×13 baking dish.  There are only so many options in a beach house 🙂  This really was a hit and I would definitely make it again for any summer occasion.
